Zucchini with sausage

1 | pounds | Sausage Meat |
1 | large | Onion -- diced |
1 | Green Pepper -- diced | |
6 | To 7 Tomatoes, peeled and sliced 1/4\" | |
Salt And Freshly Ground Pepper to taste | ||
1 | cup | Parmesan Cheese, freshly grated |
¼ | cup | Bread Crumbs |
2 | tablespoons | Butter -- softened |
Directions
In a saucepan, blanch the zucchini in boiling salted water to cover for 10 mins. Drain. Cut the zucchini into ½" slices.
In a skillet, saute the sausage meat (breaking it into pieces wuth a fork) with the onion and green pepper until the onion is golden.
Drain.
Layer the zucchini, sausage mixture tomatoes sprinkled with salt and pepper, and Parmesan cheese in a lightly oiled 2-qt baking dish, ending with a layer of tomatoes. Sprinkle the tomatoes with the bread crumbs and more cheese. Add salt and pepper to taste, dot the crumbs with butter, and bake the dish in a preheated 350 F. oven for 1 hr, or until top is golden.
Serves 6-8.
