Mustard and thyme marinaded riblets

1 | 600 gram pac lamb riblets | |
2 | tablespoons | Smooth Dijon mustard |
2 | tablespoons | Grainy mustard |
1 | 15 grams pac fresh thyme; finely chopped | |
6 | tablespoons | Olive oil |
Directions
Place the riblets in a non-metallic dish.
Combine all the marinade ingredients in a bowl and pour/brush over. Leave to marinade for 1-2 hours or overnight.
Preheat a grill to a moderate heat and cook for 15-18 minutes. Serve immediately with a salad.
