New potato, cashew nut and orange salad

Ingredients

500 grams New potatoes; (1lb)
125 grams Cashew nuts; (4oz)
4 larges Tomatoes; skinned and sliced
1 120 g pack watercress
1 teaspoon White wine vinegar
1 teaspoon French mustard
2 tablespoons Orange juice
Grated rind of 1 orange
100 millilitres Olive oil; (31/2fl oz)
Salt and freshly ground black pepper

Directions

FOR THE SALAD

FOR THE ORANGE DRESSING

Combine the salad ingredients.

Place all the ingredients for the dressing in a liquidizer and blend until creamy.

Just before serving and while the potatoes are still warm toss the salad in the dressing.
