No cholesterol fruit cookies

Ingredients

3 | mediums | Sized ripe bananas |
1 | teaspoon | Vanilla |
1½ | cup | Rolled oats |
1½ | cup | Coarsely chopped mixed dried fruit (dates, raisins, apricots, prunes) |
⅓ | cup | Canola or sunflower oil |
⅛ | teaspoon | Salt |
½ | cup | Uncooked oat bran (for hot cereal) |
½ | cup | Chopped walnuts or almonds or black walnuts |
Directions
Preheat oven to 350 F. and grease 2 large cooky sheets. Mash bananas in large bowl until smooth (should have 1½ cups) Add oats, oat bran, mixed fruit and nuts. Stir well to combine. Drop by rounded Tbs. onto cooky sheets about 1 inch apart. Flatten. Bake 20 mins. or until bottom edge of cookies are lightly browned. Transfer to wire rack to cool. Store in the refrigerator. These are very moist cookies. Makes 2 dozen.
