Ingredients

1.00 large fryer chicken - (abt 3 lbs); rinsed, and
1 innards removed
1.00 piece fresh ginger -; (abt 1 long)
1.00 cup chopped green onions
1.00 teaspoon szechwan brown peppercorns

Directions

Season the chicken with salt and pepper. Place the chicken in a pot and cover with water. Add the remaining ingredients. Bring the liquid to a boil and cover. Turn off the heat and cook for 2 hours. Strain and remove the meat, discard the bones. This recipe yields about 1½ pounds chicken meat.
