Oatmeal date cookies

1 cup Salad oil
1 tablespoon Vanilla
2 larges Eggs
2 cups Sugar, separated
2 cups Flour
teaspoon Baking soda
1 teaspoon Salt
3 cups Oatmeal, quickcooking
1 cup Dates, pitted
Pecan halves

Directions

preheat oven to 375. in bowl, beat oil, vanilla, eggs, and 1¼ c sugar until smooth. with mixer at low, beat in flour baking soda, salt until blended well. with spoon stir in oats and chopped dates.

Place ¼ c sugar in small bowl, roll heaping tbsp. of dough into balls, roll balls in sugar and place about 2 inches apart, on 2 ungreased large cookie sheets. with hand press each ball to make a 3 inch round. if you like garnish top of each cookie with a pecan half. bake 12 to 15 minutes until golden. with pancake turner, remove cookies to cool store cookies in tightly covered container. 155 calories per cookie, 7 g fat, 121 mg. cholesterol, 100 mg. sodium Submitted By KATHERINE WALDEN On 10-04-94
