Okra stuffed tomatoes

Ingredients

Quantity Ingredient
2 tablespoons Oil
1 pounds Frozen okra; thawed and sliced
1 cup Chopped onions
3 Garlic cloves; minced
Salt & freshly ground pepper to taste
cup Cooked rice
3 tablespoons Butter
1 teaspoon Cajun spice mixture
4 larges Tomatoes

Directions

Preheat oven to 350 degrees. In skillet with oil, combine okra and onions.

Saute until onions are translucent. Add garlic, salt, pepper, rice and butter. Saute. Allow to simmer. Meanwhile, cut tops from tomatoes and carefully scoop out pulp. Set tomato shells aside. Stir pulp into okra mixture. Add cajun spice. Stuff tomatoes with okra mixture. In shallow baking dish, place stuffed tomatoes. Cook until heated throughout. Serve warm.
