Ollie's restaurant cinnamon rolls

3 quarts Milk -- scalded and cooled
cup Yeast
4 cups Sugar
3 Eggs
35 cups Flour
Butter -- melted
Cinnamon
Sugar

Directions

Add yeast to the milk and let stand to proof. Combine sugar, eggs, and flour. Add milk and yeast mixture and knead to combine. Let dough rise in warm place until doubled in bulk. Roll out to ¼-inch thickness. Cover with melted butter and a mixture of cinnamon and sugar. Roll dough and cut into ¾-inch slices. Place on greased baking sheets and let rise again for 30 to 40 mins. Bake for 8 to 10 mins in a preheated 375 F oven. Serve warm.
