>From the cook book "Cross Creek Cookery" By Marjorie Kinnan Rawlings (1949)

She goes on to write that she was shown by a another cook to pat out the dough and then poke a hole in it so that there would be more crispy crust which she thought was good. She also noted that she had heard of people adding corn but she believed if you added corn you could no longer call them Hushpuppies. It was also made clear that beer could be used instead of water or milk, however those that drank beer had little worth while judgment as to what tasted good. Miss Rawlings personality pours out in her writings. She must of been a force to reckon with at the Cross Creek restaurant.
