Orange salsa

Ingredients

2 larges (Florida) oranges, peeled,
Pith removed and diced
1 1/2 c)
1 large Tomato, seeded and diced
(1c)
cup Minced red onion
1 teaspoon Grated orange peel
1 teaspoon Minced garlic
1 teaspoon Minced ginger root
½ Jalapeno chili pepper,
Minced fine (2t)
¼ teaspoon Salt
1 tablespoon Fresh cilantro, or
Coriander

Directions

In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve. Before serving, stir in the cilantro.
