Orange-jalapeno salsa

Ingredients

Quantity Ingredient
½ cup Jalapeno jelly, * see note
2 tablespoons Cider vinegar
2 teaspoons Kosher salt
¼ teaspoon Ground red pepper
3 Roma tomato, seeded and chopped
1 cup Red onion, diced
3 tablespoons Fresh cilantro, chopped
4 teaspoons Jalapenos, chop
2 larges Navel oranges

Directions

*OR use orange marmalade.

In a large bowl, blend jelly, vinegar, salt and red pepper. Add tomatoes, onion, cilantro and jalapenos. Grate zest from oranges and add to bowl.

Peel oranges, section and add pulp to bowl. Toss gently; adjust seasonings.

Like most relationships, this is better after some time has passed and the flavors have had a chance to work things out.
