Oven fried chicken tenders

¼ | cup | Pecans; Chopped |
2 | cups | Toasted Corn Cereal; Crushed |
1 | teaspoon | Salt |
½ | teaspoon | Chile Powder |
¼ | teaspoon | Pepper |
6 | Boneless Chicken Breast Halves; Cut Into Strips | |
¼ | cup | Olive Oil |
Directions
Place pecans in a small microwave safe bowl. Microwave on high for 1½ to 2 minutes to toast. In medium bowl, combine crushed cereal, toasted pecans, salt, chile powder, and pepper; set aside. Cut each chicken breast into 4 tenders. Dip each chicken tender in oil, then coat with seasoned cereal crumbs. Place tenders in well-greased 9x13 inch glass baking dish. Bake in 350 degree oven for 25 minutes.
NOTES : Don't use boxed cereal crumbs - too finely ground.
