Overnight oatmeal pancakes

Ingredients

2 | cups | Quick or old-fashioned oats |
2 | cups | Buttermilk |
3 | Eggs | |
⅓ | cup | Vegetable oil |
½ | cup | All-purpose flour |
2 | teaspoons | Sugar |
2 | teaspoons | Baking soda |
Directions
In a large mixing bowl, combine the oatmeal and buttermilk. Stir well.
Cover the bowl and place in the refrigerator. The next morning, mix the remaining ingredients with the oatmeal mixture. Drop onto a hot greased griddle and cook one side, flip, and cook until browned.
