Passover mandel bread

5 | Eggs | |
1¾ | cup | Sugar |
1 | cup | Oil |
1 | cup | Walnuts, finely chopped |
1 | tablespoon | Vanilla or almond extract |
3 | cups | Cake meal |
1 | cup | Mini chocolate chips |
Cinnamon sugar |
Directions
(from my friend, Maddie, who doesn't know where she got it from) Beat eggs, sugar, oil, and pinch of salt. Add cake meal, nuts, chips, and extract. Shape into 2 long rolls and sprinkle with cinnamon sugar. Bake on greased and floured cookie sheet at 350F for 20 minutes. Cut ½ inch slices while warm, stand on end* and bake 15 - 20 minutes more.
*original recipe says to lay slices on their sides and bake one side then turn them over and bake the other. Either method works fine.
