Pasta primavera with pesto

Ingredients

Quantity Ingredient
3-4 cups of broccoli flowerets and carrots sliced at an angle
12 ounces Pasta (rotini-red, green and white)
Approx 2/3 cup fresh basil leaves
cup Pine nuts or walnuts (or any combination)
4 eaches Cloves garlic
cup Extra virgin olive oil
½ cup Parmesan cheese, freshly grated

Add carrots and pasta to boiling water. Add broccoli after 5 minutes.

While pasta/vegetables are cooking, add basil, nuts and garlic to food processor and pulse until finely chopped. With the machine running, pour in the olive oil in a thin stream. Add the cheese, salt and pepper to taste and process briefly to combine. Thin with 2 Tbs HOT water. This will make it easier to toss. Toss pesto with hot pasta and vegetables.
