Pasta with bacon, black olives and pesto

Ingredients

Quantity Ingredient
2 8 oz packs fresh egg tagliatelle
6 ounces Back bacon; derinded and cut
; into strips
1 Onion; chopped
1 Clove garlic; crushed
1 Jar red or green pesto
2 ounces Pitted black olives; chopped
Salt and freshly ground black pepper
2 tablespoons Freshly chopped parsley

Directions

1. Cook the pasta following the pack instructions.

2. Fry the bacon for 3-4 minutes, then stir in the onion and garlic. Cook for a further 3-4 minutes.

3. Stir in the pesto, olives, cooked, drained pasta and season to taste.

Mix well and serve immediately sprinkled with freshly chopped parsley.

NOTES : Dried pasta could be used instead of fresh pasta, cook following instructions on the pack. Delicious served with bread ciabatta and a green salad.
