Pasta with bacon and walnuts

Ingredients

350 grams Tagliatelle
Seasoning
50 millilitres Olive oil
250 grams Smoked bacon cut into strips
2 Cloves garlic - peeled and crushed
1 Onion; chopped
75 grams Walnuts - chopped roughly
450 grams Plum tomatoes; skinned and diced
4 tablespoons Flat leaf parsley; chopped
1 Lemon; rind of
250 grams Soft cheese - ie goat's cheese; cubed

Directions

1 Cook the spaghetti in a pan of boiling salted water. Heat the oil in a large frying pan. Fry the garlic and onion for 3-4 minutes, afterwards adding the bacon and continuing to cook for a further five minutes.

2 Stir in the walnuts, tomatoes, parsley and lemon rind. Heat gently until piping hot and season. Drain the pasta, place back in the pan and heat through.

3 Toss the pasta with the bacon sauce. When serving, top with little cubes of goat's cheese and sprinkle with a little extra parsley.
