Pawpaw bread

Ingredients

3 | cups | Pawpaw pulp* |
1¼ | cup | Apple juice or other fruit juice |
¼ | cup | Vegetable oil |
4 | Eggs | |
1 | tablespoon | Vanilla |
1 | tablespoon | Fresh orange rind or |
1 | teaspoon | Dried orange rind |
1 | teaspoon | Nutmeg |
½ | teaspoon | Powdered cardamom |
6½ | cup | Buckwheat flour or |
4½ | cup | Whole wheat bread flour |
2 | teaspoons | Baking soda |
1 | cup | Chopped pecans |
Directions
*You can substitute wild persimmons or bananas.
Mix fruit, juice, oil, eggs, vanilla, orange rind and spices in a blender or by hand. Mix the flour with the baking soda. Combine the wet and dry ingredients. Fold in nuts.
Put into 2 oiled 8½ x 4 ½-inch bread pans. Bake 1 hour in a preheated 350 F. oven or until a toothpick inserted in the center comes out clean.
