Peppered ham with parsnip puree

50 | grams | Caster sugar; (2oz) |
3 | tablespoons | Water |
25 | grams | White mustard seeds; crushed (1oz) |
1 | 125 gram pac Premium peppered ham |
Directions
FOR THE PUREE
FOR THE MUSTARD FRUITS
Put the parsnips into a pan and cover with water. Bring to the boil and cook until soft.
Drain off the water, puree the parsnips with the butter and seasoning. Keep warm.
Meanwhile, put all the fruits into a saucepan with the sugar, water and mustard seeds.
Heat until the fruit softens and the sugar solution reduces by half.
Serve the ham on top of the parsnip puree with the mustard fruits as a glaze.
