Pheasant smitane

Ingredients

Quantity Ingredient
4 pounds Pheasant
Sliced salt pork or bacon
Butter
4 cups Apples; diced, tart
2 tablespoons Calvados
2 cups Sour cream

Directions

Bard the bird with the salt pork or bacon. Brown it in butter in a heavy pan. Then place it in a casserole with the drippings. Cover tightly and let simmer over low heat until tender, about 45 min. Add apples, Calvados and sour cream and cook over low heat until apples are tender. Do not let it boil. Serve with rice or wild rice.
