Pistachio cheese spread

Ingredients

Quantity Ingredient
2 packs (8-oz) cream cheese; softened
2 cups Grated sharp Cheddar cheese
½ cup Chopped pistachios
½ cup Green onions or chives
3 tablespoons Brandy or apple juice
1 Clove garlic; minced
teaspoon Cayenne pepper
Chopped pistachios; for garnish

Directions

Combine all ingredients except nuts for garnish. Beat until thoroughly blended (or process in food processor 30-45 seconds).

Refrigerate cheese mixture; when firm, shape into 4 balls and roll in chopped pistachios. Or spoon into four 3-1/2x2-½-inch crocks; top with chopped pistachios.
