Goat cheese and pistachio spread

Ingredients

Quantity Ingredient
2 packs (3 oz) goat cheese; softened
¼ cup Chopped pistachios
1 large Clove garlic; minced
½ teaspoon Salt
1 Stick; (1/2 cup) butter, softened
¼ cup Chopped fresh chives

Directions

Here's a spread I served on Thanksgiving as a pre-dinner treat to keep the crowd from getting restless smelling the turkey hour after hour....

In food processor, combine garlic and salt, let sit for 10-15 minutes. Then add the goat cheese, butter and chives. Blend until smooth. Stir in the pistachios, garnish with more chives. Serve with crostini, crackers or a sliced baguette. I also served carrot and celery sticks.
