Pork roast dijon

3 pounds Pork Roast;rolled boneless
1 cup White Wine
3 tablespoons Mustard;Dijon
½ teaspoon Pepper
1 cup Cream
3 tablespoons Capers;chopped

Directions

Rub pepper into roast. Place fat side up on a rack in a roasting pan. Cook in 375 F oven for 45 - 55 minutes, until done.

Remove roast; keep warm on a serving platter.

Skim fat from the roasting pan. Deglaze with white wine over high heat, about 3 minutes. Add mustard, cream, capers and any juice from pork roast. Cook until reduced by almost half.

Serve over the sliced pork roast.
