3 | pounds | Pork Roast;rolled boneless |
1 | cup | White Wine |
3 | tablespoons | Mustard;Dijon |
½ | teaspoon | Pepper |
1 | cup | Cream |
3 | tablespoons | Capers;chopped |
Directions
Rub pepper into roast. Place fat side up on a rack in a roasting pan. Cook in 375 F oven for 45 - 55 minutes, until done.
Remove roast; keep warm on a serving platter.
Skim fat from the roasting pan. Deglaze with white wine over high heat, about 3 minutes. Add mustard, cream, capers and any juice from pork roast. Cook until reduced by almost half.
Serve over the sliced pork roast.
