Potato, lamb and herb style saute

25 | grams | Butter; (1oz) |
250 | grams | Lamb stir-fry |
500 | grams | Punnet Anya potatoes; cooked, refreshed |
; and sliced into 2cm | ||
; (1 inch) pieces | ||
50 | grams | Cubed pancetta; (2oz) |
125 | millilitres | Dry white wine; (4fl oz) |
1 | 50 grams who black pitted olives; (2oz) | |
4 | Sundried tomatoes sliced into 2cm; (1 inch) pieces | |
2 | tablespoons | Freshly chopped thyme |
Directions
In a wok or large frying pan, heat the olive oil and butter until hot.
Saute the lamb, sliced potatoes and pancetta for 4-5 minutes, then pour over the white wine. Add the pitted olives, sundried tomatoes and fresh thyme and saute for a further 1-2 minutes.
Remove from the heat and serve immediately.
