Potato apple soup

1 | cup | Onion; chopped |
¼ | cup | Celery; sliced |
1 | pounds | Potatoes; peeled and cut into 1/2\" slices |
1½ | cup | Chicken Broth |
1 | Apple; finely diced | |
¼ | cup | Fresh Dill; chopped |
1 | cup | Half-And-Half |
Salt | ||
Pepper |
Directions
In a large saucepan, combine onion, celery, potatoes and broth. Place on stove top over medium-high heat and cook 15-20 minutes or until potatoes are tender. Turn off heat, then use mixing spoon to stir in apple and let mixture stand, covered, 5 minutes. Place mixture in blender or food processor and puree until smooth. Return mixture to saucepan, stir in dill and half-and-half and season with salt and pepper. Cook over low heat about 5 minutes, then serve immediately.
