9 Potatoes, grated
4 Slices bacon
½ Onion, chopped
1 cup Milk, boiled
1 Egg, beaten
2 tablespoons Sour cream (heaping)
1 Dash Salt
1 Dash pepper

Directions

Put potatoes into colander and press out juices. Cook bacon and keep the fat. (Vegetarians omit meat.) Combine potatoes, bacon, onion and hot bacon fat, and pour into a 9 x 13-inch baking dish. Pour milk over top. Pour on egg and sour cream. Salt and pepper to taste. Bake at 350 degrees for 1 hour or until light brown on top. Serve immediately or let flavors blend overnight.
