Potato pancakes with premium ham

125 | grams | Self-raising flour; (4oz) |
1 | teaspoon | Bicarbonate of soda |
100 | millilitres | Milk; (3 1/2fl oz) |
100 | grams | Cooked; mashed potato, |
; seasoned (3 1/2oz) | ||
1 | medium | Size egg; lightly beaten |
25 | grams | Butter; melted (1oz) |
2 | tablespoons | Vegetable oil |
1 | 125 gram pac English Premium ham | |
100 | grams | Fruit chutney; (3 1/2oz) |
Directions
Sieve the flour and bicarbonate of soda into a medium mixing bowl.
Make a well in the centre, add the milk, mashed potato and egg. Stir with a wooden spoon until well combined.
Add the melted butter and stir in.
Heat the oil in a frying pan. Spoon rounded tablepoonsful of the mixture into the pan, about 2cm apart.
Cook over a medium heat for 3 minutes on each side until golden brown.
Cut the ham slices in half and place on to the potato pancakes.
Serve with the fruit chutney.
