Potato salad with chopped mint and lemon balm

Ingredients

Quantity Ingredient
16 smalls Potatoes; scrubbed
1 tablespoon Lemon Balm
1 tablespoon Fresh; chopped mint
2 tablespoons Olive oil
1 Clove garlic; crushed

Directions

1. Boil the potatoes until cooked but firm and leave to cool.

2. Mix all the other ingredients and pour over the cold potatoes.

3. Chill for 1 hour.
