Potatoes with kale or onions, irish style

2 Potatoes
½ cup Kale, chopped or
½ cup Onion, sliced
¼ cup Butter, melted

Directions

Peel, quarter, boil and mash the potatoes. While they are boiling either steam the kale or fry the onion in a little butter. Mix the vegetable into the mashed potato. Press the mixture into a soup bowl, invert and tap out onto a plate. Press a well in the top of the inverted mound to hold the melted butter.

Variations: Fill the well with gravy, meatballs, stew, a sausage or a poached egg.

Garnish the dish with crumbled fried bacon, grated cheese or diced ham Substitute 1 or 2 Tbl minced parsley for the kale.
