Quick cucumber summer salad

Ingredients

Quantity Ingredient
1 medium Cucumber; sliced
1 Roma tomato; diced
½ small Onion; sliced in rings
Equal parts of white vinegar and water
Salt and pepper to taste
1 pinch Or 2; sugar

Directions

Combine all ingredients. Can be eaten straight away, but is best when made 2 or 3 hours ahead and refrigerated. Good the next day if kept in closed container and refrigerated. an old family favorite I got from my mom.

Sometimes she doesn't use the tomato. Sometimes I prefer to add a sprig of crushed, chopped cilantro.
