Sweet cucumber salad

Ingredients

1 | small | English cucumber |
1 | small | Onion, sliced thinly |
3 | tablespoons | White vinegar |
2 | tablespoons | Lemon juice |
2 | tablespoons | Vegetable oil |
1 | tablespoon | White sugar |
½ | teaspoon | Salt (optional) |
pinch | Pepper, or to taste |
Directions
With fork, score cucumber lengthwise. Cut in half, lengthwise, and slice thinly crosswise. Slice onion thinly and combine in a bowl with the cucumber. Whisk together remaining ingredients and pour over cucumber/onion mixture. Refrigerate for at least 4-5 hours to allow flavours to blend. Makes about 4 servings.
