Ranch slaw

4 | cups | Thinly sliced napa cabbage (Chinese cabbage) |
¼ | cup | Chopped red bell pepper |
¼ | cup | Chopped yellow bell peppers |
¼ | cup | Unsalted cashews, toasted |
¼ | cup | Red wine vinegar |
1 | tablespoon | Olive oil |
⅛ | teaspoon | Salt |
⅛ | teaspoon | Pepper |
Directions
Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes. Yield: 4 servings (serving size: 1 cup).
