Raspberry and walnut vinaigrette

½ | teaspoon | Honey mustard (available at specialty foods shops and some supermarkets) |
2 | tablespoons | Raspberry vinegar (available at specialty shops) |
3 | tablespoons | Walnut oil |
3 | tablespoons | Olive oil |
1 | tablespoon | Minced fresh tarragon |
Salt to taste |
Directions
In a bowl whisk together the mustard, the vinegar, and salt to taste, add the oils in a stream, whisking, and whisk the vinaigrette until it is emulsified. Stir in the tarragon. Makes about ½ cup.
