Recipe: cabbage soup

Ingredients

Quantity Ingredient
3 tablespoons Butter
2 mediums Onion
1 each Cabbage head
10 cups Vegetable Broth (home made)
6 eaches Slices Whole wheat bread
8 ounces Fontina, sliced
1 cup Parmesan grated

Directions

slice the cabbage into thin strips. slice the onions thinly. melt butter under medium heat and then saute the onions about 5 or 6 minutes. Add the sliced cabbage and sweat stirring occasionally to blend flavors. Add broth and bring to a boil. Cover and lower heat to a simmer for about 1 hour. In oven proof bowls add a slice of wheat bread in the bottom of each. Ladle in the soup and cover with a slice of fontina cheese. Sprinkle with grated parmesan cheese.
