Reid's hotel (funchal, madeira) orange pudding

Ingredients

Quantity Ingredient
2 packs Unflavored gelatin
Juice of 2 oranges
4 cups Milk
Grated rind of 2 oranges
1 cup Sugar
12 Eggs -- divided
6 tablespoons Confectioner's sugar

Directions

Dissolve unflavored gelatin in orange juice.

Heat milk on stove. When milk is hot, add grated orange rind, sugar and oj/gelatin mixture; stir.

Beat the 12 egg yolks (reserve the whites) in a bowl, then slowly stir into milk mixture. Let it all simmer 20 min., stirring occaisionally.

Whip the 12 egg whites, gradually adding confectioner's sugar.

Fold the egg whites into the milk mixture, put it all in a bowl; cover and refrigerate overnight.
