Rice ensalada

Ingredients

Quantity Ingredient
1 can Spam luncheon meat - (12 oz); cut into 1/2\" strips
1 Red bell pepper; cut into 1/2\" strips
1 Green bell pepper; cut into 1/2\" strips
2 cups Fresh corn kernels or thawed frozen corn
½ cup Oil
3 tablespoons Chi-Chi's hot salsa
1 tablespoon Vinegar
2 cups Cooked rice

Directions

In skillet over medium-high heat, cook Spam and bell peppers 7 to 10 minutes or until browned. Add corn. Cover. Cook 5 to 7 minutes longer or until corn is tender.

Meanwhile, in small bowl, whisk together oil, salsa, and vinegar. Serve warm Spam mixture on rice. Drizzle with salsa mixture.
