Rice ensalada

1 | Red bell pepper; cut into 1/2\" strips | |
1 | Green bell pepper; cut into 1/2\" strips | |
2 | cups | Fresh corn kernels or thawed frozen corn |
½ | cup | Oil |
3 | tablespoons | Chi-Chi's hot salsa |
1 | tablespoon | Vinegar |
2 | cups | Cooked rice |
Directions
In skillet over medium-high heat, cook Spam and bell peppers 7 to 10 minutes or until browned. Add corn. Cover. Cook 5 to 7 minutes longer or until corn is tender.
Meanwhile, in small bowl, whisk together oil, salsa, and vinegar. Serve warm Spam mixture on rice. Drizzle with salsa mixture.
