Rice with apples and raisins - lf

Ingredients

Quantity Ingredient
1 tablespoon Olive oil
1 cup Rice
1 small Onion; chopped
1 medium Apple; peeled and cored and chopped
½ cup Golden raisins
2 teaspoons Concentrated chicken stock; dissolved in
2 cups Hot water
¾ teaspoon Curry powder
Pepper; to taste

Directions

Saute onion in oil. Add rice and brown slightly. Add remaining ingredients in order listed. Bring toa boil. Cover and reduce heat to slow simmer. cook 15 minutes until rice is tender.
