Ingredients

6 cups ;water
1 cup Vegetable broth
2 cups Peas; dried split
2 mediums Carrots; diced
8 ounces Seitan; cubed
1 slice Kombu; 3\", optional
1 medium Onion; diced
Tamari; to taste

Directions

BRING TO BOIL IN 4 QUART POT

ADD & SIMMER 40 MINUTES MORE

ADD & SIMMER 5-10 MINUTES

If adding kombu and it didn't dissolve in the cooking process, remove from pot, cut in small squares and add to the soup. Garnish soup with fresh parsley and serve. Per serving: Cal 189, Protein: 23 gm, Carbo.: 28 gm, Fat 1 gm Note: You can vary this soup by using other vegetables, such as turnips, potatoes, and celery. A touch of fresh or dried basil is a nice change.
