Super-easy split pea soup

2 | Beef bouillon cubes | |
1 | medium | Onion; finely chopped |
1 | cup | Grated carrots; (2 to 3 carrots) |
½ | teaspoon | Salt |
½ | teaspoon | Black pepper |
Directions
Combine all the ingredients in a soup pot; mix well. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer for 1 hour, or until the peas are soft and thoroughly cooked, stirring occasionally.
Note: To add a traditional smoky ham flavor, stir in 1 teaspoon of liquid smoke (found in the supermarket spice section) after the soup comes to a boil. For a heartier soup, add some chopped deli ham or smoked turkey.
