Roasted green beans and onions

1 | small | Purple Onion; sliced & separated into rings |
4 | larges | Garlic cloves; cut in half lengthwise |
Olive Oil flavored vegetable cooking spray | ||
½ | teaspoon | Dried Thyme |
¼ | teaspoon | Salt |
¼ | teaspoon | Freshly ground Black Pepper |
Directions
Vickie asked for recipies using fresh green beans. Following is very simple and is my favorite (taken from "Cooking Light Cookbook 1996"): Wash beans; trim ends & remove strings. Place beans, onion & garlic in a 13 x 9 x 2" pan coated with cooking spray. Coat vegetables with cooking spray.
Sprinkle thyme & salt over vegetables; toss well. Bake at 450F for 15 minutes or until tender, stirring once. Sprinkle with pepper. 4 (¾ cup) servings: 54 calories; ½ g fat; 0 saturated fat; 2½ g protein; 11⅘ g carbohydrate; 0 cholesterol; 156 mg sodium; 2½ g fiber; 1½ mg iron; 62 mg calcium
