Runner beans with tarragon cream

1 | 250 gram pac runner beans; trimmed | |
15 | grams | Butter; (1/2oz) |
1 | bunch | Salad onions; trimmed and sliced |
1 | 142 millilit soured cream; (5fl oz) | |
3 | tablespoons | Freshly chopped tarragon |
Salt and freshly ground black pepper | ||
1 | Sprigs tarragon |
Directions
TO GARNISH
Cut the beans into 2. 5cm (1 inch) pieces on the diagonal. Cook in boiling water for 7 minutes until tender. Drain and keep warm.
Melt the butter in a saucepan and saute the onions for 3-4 minutes. Stir in the cream, tarragon, cooked beans and add seasoning to taste. Do not allow to boil.
Spoon into a warmed serving dish, garnish with the sprigs of tarragon and serve with grilled meats or fish.
