Rustic tuscan mussel stew

Ingredients

Quantity Ingredient
1 can Cannelini beans
4 Plum tomatoes
4 Plum tomatoes; pureed
2 Cloves garlic; chopped
1 Red onion; chopped
100 millilitres White wine
20 Shelled mussels
Chopped basil
Chopped coriander
1 ounce Diced focaccia bread
Olive oil
Salt and pepper

Directions

Sweat the onion and garlic in the oil. Add the wine, beans, all the tomatoes and the mussels. Bring to the boil then simmer for about 3 minutes. Add the basil, coriander and focaccia and season well.

Serve immediately, drizzled with olive oil.
