Quantity | Ingredient | |
---|---|---|
4 | eaches | Baking potatoes |
1 | each | Sweet red pepper |
16 | eaches | Sage leaves |
3 | tablespoons | Olive oil |
2 | eaches | Cloves garlic, minced |
½ | teaspoon | Each, salt and pepper |
Directions
Scrub baking potatoes and slice almost all the way through in ¼ inch intervals. (place knife beside potato so the cutting knife hits the edge of the one beside the potato to ensure cutting all the way through) Cut red peppers into quarters, slice crosswise into strips.
Insert one strip into each slit of potato. Insert sage leaf into every third slit on potato. Stir together the olive oil, garlic, salt and pepper. Brush over the potatoes and wrap in tin foil, sealing well. Place potatoes on greased grill over medium heat, cover and cook, turning occasionally, for about 1 hour, or until potatoes are tender.
