Sailors' liberty pancakes

Ingredients

Quantity Ingredient
2 cups Buttermilk baking mix
2 tablespoons Sugar
½ teaspoon Ground cinnamon
1 dash Ground nutmeg
5 Eggs -- beaten
½ cup Beer
2 tablespoons Vegetable oil

Directions

Mix together the biscuit mix, sugar, cinnamon, and nutmeg. Stir together the beaten eggs, oil and beer. Add to the dry ingredients.

Batter will be lumpy. Do not overmix. Add more beer if you want a thinner pancake. Heat a griddle and grease very lightly. Use ¼ cup batter for each pancake. Cook for about 2 minutes on each side.
