Salad of baby spinach, crab, tomato and creme fraiche

120 grams Baby spinach; (4oz)
120 grams White crab meat; (4oz)
3 Plum tomatoes
2 Lemons; Juice of
60 grams Creme fraiche; (2oz)
1 tablespoon Chives; chopped
Salt and pepper

Directions

Pick crab of all the white meat. Wash the baby spinach well. Remove skin and seeds from the tomatoes and coarsley chop. Mix the lemon juice into the creme fraiche.

Mix all the ingredients together with the chives and season with salt and pepper. Serve immediately.
