Salmon fillets with cream, basil and sundried tomato sauce

1 | 6 oz salmon fillet | |
3 | Floz Noilly Pratt | |
6 | Floz double cream | |
6 | Basil leaves | |
½ | ounce | Sundried tomatoes |
1 | Squeeze lemon juice | |
Salt and pepper |
Directions
First prepare the sauce. Put Noilly Pratt into a saucepan and reduce by half. Leave to cool. Put cream into another saucepan and boil to reduce until thick and golden. Chop basil leaves and sundried tomatoes and add to the cream with the reduced Noilly Pratt. Sharpen to taste with lemon and season with salt and pepper.
Place salmon on a baking sheet with a good sized knob of butter but no seasoning. Place in oven at 200C for 5 minutes only. Take out and dish up with sauce at the side.
