Salmon steaks with mustard sauce

1 | tablespoon | Olive oil |
4 | Salmon steaks | |
1 | tablespoon | Red wine vinegar; up to 2 |
1 | tablespoon | Wholegrain mustard |
3 | tablespoons | Creme fraiche |
Salt and freshly ground black pepper |
Directions
1. Heat the butter and oil in a frying pan. Add the salmon steaks and cook over a moderate heat for 12-15 minutes, turning occasionally until cooked through. Remove from the pan and keep warm.
2. Add the vinegar and mustard to the pan. Cook for 1 minute, stirring well to de-glaze the pan.
3. Stir in the creme fraiche add seasoning to taste and heat through.
4. Pour over the salmon steaks and serve immediately.

NOTES : This light refreshing sauce is delicious with salmon, but would also be ideal with mackerel, cod, haddock, chicken, pork or veal.
