The ingredient that makes this sauce unique is vinegar. The sauce is hot so it is good to eat in the winter. It can be tossed with a variety of different pastas. Ingredients Metric 2 Tbs. olive oil 2 Tbs. 1 medium onion, sliced 6 oz. bacon or pancetta, chopped 170 g 2 cloves garlic, minced 2 2 tsp. chili pepper 2 tsp. Few drops of Tabasco sauce Few drops 1 oz. wine vinegar 30 ml 2 oz. red wine 60 ml 1 14 oz. can peeled tomatoes 400 g 1 Tbs. tomato paste 1 Tbs. Salt and pepper Heat the oil in a large frypan and saute the onion, bacon, and garlic until brown. Add the remaining ingredients and simmer over low heat for 20 to 25 minutes. Makes 3 cups/710 ml
