Sauce marchand de vin (mushroom wine sauce)

Ingredients

Quantity Ingredient
1 cup Mushrooms; Sliced Fine
2 tablespoons Butter
½ cup Beef Stock; HOT
1 cup Sauce Espagnole
½ cup Madeira
½ Lemon; Juice Only

Directions

Saute the mushroom slices in the butter. Add the beef stock (it should be hot before being added). Simmer 10 minutes. Add the Sauce Espagnole and the Madeira. Simmer 20 minutes. Squeeze the lemon juice into the sauce. Season to taste.
