Savory bluefish chowder

3 pounds bluefish, fresh
1 each onion, medium
4 cups milk
1 tablespoon flour
1 tablespoon butter
1 cup cracker crumbs
teaspoon salt
½ teaspoon pepper
teaspoon summer savory
¼ teaspoon thyme

Directions

Boil the fish and onion together in a small quantity of water. When finished, mash the onion and fish together in a baking dish. Cover liberally with cracker crumbs and pieces of butter. Bake to a golden brown, adding more milk if a soft softer mixture is desired.
